Great with any meal - any season!1 cup couscous1 cup boiling water5 tomatoes, chopped1 cup chopped fresh parsley1/4 cup chopped fresh mint leaves2 cloves crushed garlic3 Tbsp lemon juice1 Tbsp sugar1 Tbsp light olive oilfreshly ground black pepperSoak the couscous in the water until the water is completely absorbed, about 5 minutes. Combine all ingredients in a bowl and toss gently.Serves 4-6.
